Maria Hoffmann is the Director of Little Roots, an outdoor education program serving children and teens across Baldwin County. Her work is centered around a simple goal: helping people reconnect with the natural world, from young children exploring the woods for the first time to adults learning how to engage with the land in a more meaningful way.
She leads local foraging walks and teaches others how to identify and use the wild foods that grow right here in our area through her programs Alabama Foraging Society. Through this work, Maria brings together outdoor education, conservation, and everyday life, encouraging a deeper understanding of the ecosystems that surround us.
Her conservation project, Gulf Coast Roots, focuses on citizen science and local environmental efforts, including oyster restoration and habitat awareness along the Gulf Coast.
In this hands-on FoodRx class, Maria will guide us in identifying and harvesting Oyster Mushrooms—a native Southeast delicacy found right here on our local hardwoods. Afterward, we’ll gather for a plant-forward feast celebrating the flavors of the forest, with vegan options for every single course!
FoodRX Dinner Menu:
- Lion’s Mane “Crab” Cakes – Golden, pan-seared patties showcasing the remarkable seafood-like texture of local Lion’s Mane mushrooms, seasoned with classic coastal herbs
- Oyster Mushroom Alfredo – Sautéed local mushrooms in a traditional creamy Alfredo sauce over pasta (a vegan cashew-cream Alfredo will also be available)
- Greek Salad – Crisp romaine, cucumbers, and peppers with house-made dressing
- Roasted Cauliflower – Oven-roasted with simple, savory seasoning
- Grilled Peaches – Caramelized peaches with candied pecans and whipped coconut cream
